Please Help With Flavor Ideas!

I have been asked by my aunt to make my cousins 16th birthday cake in October. And this is an absolutely HUGE deal b/c she has had medical problems since she was born and the doctors told us she wouldn't live past 2 and if she did she wouldn't past 6 and if she did then not past 10 and if she did then not past 14 etc... She has a VERY very rare DNA disorder and the only other 3 recorded cases of it didn't live past the age of 3, on top of other heart issues. Well she proved all of them wrong!

She has requested a cake with Raspberry in it (she doesn't care if it is filling orthe flavor of the cake) However here are some restrictions she has on food.

The following foods are PROHIBITED from her diet.
Chocolate
Orange
Tomatoe
Citrus
ABSOLUTELY NO CAFFIENE

So my quesiton is... any ideas for something to compliment the Raspberry besides a white or yellow cake? I want this to be extra special, because she sure is to the whole family.

Can she have citrus flavoring? If yes, I would maybe do a lemon flavored cake. But, maybe even the flavoring is bad? I'm not too good with allergies, or ingredients in lemon extract/artificial lemon flavoring???

I just pulled a cake idea sheet from Joanns, and it is a cake mix doctored with raspberry yogurt. Then it has a raspberry filling, and what sounds like a pretty good icing. If you want I will copy it for you here. The filling is seedless, which is a plus.

As for the citrus flavoring.. it is out... We don't want to take any chances that there is anything it that would cause problems for her.

A lot of people that can't have chocolate, can have white chocolate. Do you know about it? That is really good with raspberry.

I was also going to suggest the same cake that Lukerubyjoy mentioned - ironically I had asked a question about the cake, as it doesn't say how many egg whites are to be used. Thanks to the printers icon_rolleyes.gif

Here is the recipe (everyone on this site tends to agree 3 egg whites would be the proper amount)

1 box white cake mix
6 oz raspberry yogurt
3/4 cup water
1/3 cup oil
3 egg whites

Preheat oven to 350 degrees.
Mix all ingredients together - beat on medium speed for 2 minutes. Pour into two 8" round cake pans. Bake for 25-30 minutes. Cool cake before frosting.

Frosting:
2 boxes instant vanilla/white chocolate pudding mix (use the smallest box which has 4 1/2 cup servings)
1 3/4 cup half and half
1-16 oz container frozen whipped topping

Mix the pudding mix and half and half together for one minute (or until the pudding is well dissolved). Fold in the whipped topping. Reserve 1 cup of whipping topping for piping.

Filling ingredients

1/2 pint extra heavy whipping cream
3 Tbsp confectioners sugar
1/4 cup seedless raspberry jam

Whip the whipping cream until soft peaks form. Add the confectioners sugar and jam.

Assembling the cake.

When cake is cool pipe a line of frosting (creating a dam) around the top outside edge of one cake layer.
Spread raspberry cream filling inside the circle.
Top with the next cake layer, frost all sides with frosting
Pipe around the top with reserved frosting
Top w/ 1/2 pint of fresh raspberries.
