Caramel Cookies Recipe - Needed Please

Hi everyone,

I'm looking for a good caramel cookies recipe. no nuts pref.
A co-worker used to bring them a long time ago. He's no longer with us, i have no idea how to contact him. i've been dying for those cookies his wife used to make. they looked like cchip cookies (w/out chips) and caramel was not gooey in the mid. so yummy.

Here is the recipe I use. HTH

1/2 cup butter, at room temperature
2 cups packed brown sugar
1/2 teaspoon vanilla
3 eggs, at room temperature
3 1/2 cups flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped nuts (optional)


Sift together flour, cream of tartar, baking soda, and salt; set aside.

Cream butter and sugar until light and fluffy. Add vanilla and eggs; mix well. Stir in dry ingredients; mix well. Stir in walnuts. Using lightly floured hands, form dough into a long roll. Refrigerate overnight. When ready to bake, preheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper. Slice 1/4 inch thick; bake 10 to 12 minutes.
