Upside Down Frosting Nightmare!

Ok - I finally decided to try this technique - which by the way is amazing for the sides of my cake. HOWEVER - when I went to pull the parchment off - OFF CAME MY ICING AS WELL!!! WHAT DID I DO WRONG?

This happened to me, too. I think (?) that maybe I didn't let the frosting get cold enough before I tried to pull off the paper. Any comments or suggestions are welcome....this would have been great if it worked.

I tried this for the first time last week. When I started to peel back the parchemnt, I could tell the icing was going with it. So I stuck the whole thing in the freezer for 10 minutes and was able to get the paper off without the icing.

I would like to see what others have to say that use this technique a lot.

It happened to me also. I was wondering if it was the type of BC I used. I made the recipe that uses crisco.

can someone tell me what "the upside icing method" is? I have never heard of this befor!!

This method has definetly peaked my interest. After reading the tutorial I am all excited to try it. Hope it goes ok. From all the trials so far I will be sure to leave it in the fridge or freezer for a bit longer. Thanks for putting up a link to the instructions icon_smile.gif

i always put mine back in the freezer for another 5minutes after i finish the sides. i have never had a problem with the icing coming off.

I love this method and have had the same thing happen to me before. But I found that after I've iced the sides and let it sit in the freezer for a while, then flip it upright...I leave the parchment/wax paper on the top of the cake and put it back into the freezer for 15-30 minutes before trying to remove the paper. Since I started doing that, I've not had the problem with the icing coming off.

Thanks! I put it back in the fridge for about 15 minutes, but I will try the freezer tonight!!!! icon_biggrin.gif
