I just had a call for one tier of a four tier wedding cake to be Key Lime Cake. All the recipes I have found have been for bundt cakes or very moist cakes with glazes. This cake will not be stacked, but all the other layers are going to be atleast four inches high torted, filled and basketweaved with IMBC.

Any ideas?

I have just done a couple of my version of Key Lime cakes and people loved them. I just used a regular white cake and filled it with one layer of buttercream and a thin layer of lime curd directly on top of the buttercream. I made sure the dam was high enough around the edges so the lime curd wouldn't seep out (lime curd is pretty soft). It was soooo yummy. Hope I explained that well enough. I did put a couple of drops of green food color in the curd so it would look a little more lime-like. icon_lol.gif

Can you find a recipe for lemon cake and make it lime instead?

I just recently made a french vanilla cake for 2 tiers of my sister's wedding cake (see pic in my photos) and we did a key lime filling, it was good!

It's funny both of you mentioned the lime curd because I had recently done a white cake with lime curd and buttercream practice cake. It was very good, but I'm afraid that is not what she is looking for. I will probably have to explain the texture issue and see what she says. If she still wants lime, I will go with the curd filling.
