I work a full time job, have 2 children to raise, and my sister wants me to bake her wedding cake. Sure, i have lots of free time on my hands!!
Ok, so i thought i could help myself out a bit by baking the cakes a bit ahead of time and freezing them. I have to bake 2 of each - 14", 10", 8" and 6". So that's a lot of cake to try and bake, fill, and decorate only after the kids are in bed! So how do you go about getting cakes ready to freesze for an extended lenght of time?

I'm not sure about everyone else but I just did this myself for an upcoming wedding this weekend. I baked my layers and after they were cooled I double wrapped them in plastic wrap and then in foil.
I wrap mine in foil and then put each one in a zipper type bag. I have kept cakes in the freezer for several months with no problems!
The Wilton book I have says seran wrap and then aluminum... and then they're good for 6 months. It's hard to do cakes with little kids huh! My kids are 1 and 3. But hey it's not just after they go to bed it's at nap time too!! But, for my last wedding cake I sent my kids to my mom's for 6 hours so I could just do it... just an idea.
Yep..........I freeze also- I double wrap with saran wrap while they are still warm, then wrap in aluminum foil, then place in a scent-free garbage bag, then place flat in the freezer. They will keep for months like this. When I thaw them, I take out of the garbage bag, but leave everything else on them, thaw on the countertop, the condensation will collect on the outside of the wrappings, so it doesn't ruin your cake. I have always had numerous compliments on how moist the cakes are.........good luck and have fun with it!
