I am tryin to make a golfing cake for my dh and it is just not working. I used shortening in the pan, then floured it, the tapped out the excess. Yet, my cake still stuck to the bottom in the middle and took out a huge chunk of cake. Any ideas how to fix and what went wrong?
What size pan did you use? How long did you wait to turn the cake out of the pan. Maybe the middle of the cake was not done.
Use a turner like the one you'd use for pancakes, as wide as you have, slide it under the part that stuck in the pan and then lay it on the cake where it goes like a puzzle. When you frost it, start by puting the icing glob on the top of that patch and make sure to cover the whole thing with the glob, then finish icing the cake as if it were not there... happens to me alot!
Use wilton's cake release or homemade...equal parts of vegetable oil, flour, and crisco blended. It's a no fail!
In that type of pan I ususally use melted Crisco and then brush it on pan and then use flour. Seems to work well for me.

Something I was taught in cake decorating class was to use a baking spray for my pan and always line the bottom of my pan with either parchment paper or waxed paper to prevent any sticking. My cakes come right out of the pan each time.
I used a 9 x 13 pan but i am sure the cake is done. I can see almost to the middle with the hunk out! lol I stuck it in the freezer for a few minutes then I am gonna use my spatula and try to fix it. Oh and I let it cool on the cooling rack for 15 minutes, then put the cake board on top and flipped it very carefully.
parchment paper Love the stuff. I line cookie sheets, cake pans. If you are going to remove it from the pan, use it. Ok, I don't use it for yeast bread loaves or angel food cakes.
Sorry this has happened to your cake. Since you have already removed it from the pan and you said it took a chunk out of the middle, now begins the repair. Take any scrap pieces of baked cake you have left either from leveling the cake or the piece that stuck to the pan, place them in a bowl. Add a small amount of corn syrup to the crumbs. Mix them together until you have a smooth paste with no large lumps. You will have to adjust the amount of corn syrup depending on the amount of cake that went in the bowl. Now you should have a generally smooth cake "spackle". Use this to fill in the hole in you cake.
This is why I never mind the humps in my cakes. I collect all the scraps in my freezer in case I have to patch a hole anywhere on any of my cakes.
This "spackle" works really well to fill in any imperfection that might develope in your baking process
Okay after checking again, the cake wasn't 100% done. The bottom was a little sticky. So, I walked to the grocery store (hubby had my car) and as I was walking I realized what I did wrong in my hurry- I forgot the eggs!!! How horrible is that!?! So, I made another and it did perfectly! Thanks ladies!
