can someone please share their favorite banana bread recipe with me? I have tons of frozen bananas to use! Thank you!

I have several...Here's my favorite

1/2 c brown sugar
1/2 c white sugar
1/2 c butter
2 eggs
3 med size bananas, mashed
1/2 c buttermilk or sour milk (1/2 T lemon juice or vinegar + milk to =1/2 cup
2 c. flour
1 t baking soda
1 t salt
Heat oven to 375. Grease 1 large loaf pan. Cream sugars and butter. Beat in eggs. Add mashed bananas to mixture. Blend in buttermilk or sour milk. Combine dry ingredients. Add to banana mixture. Combine wet and dry ingredients only until moistened. Don't overmix. Bake at 375 for 60 minutes.

I also have one for a banana zucchini bread recipe that is very good. oooooh and I have one for banana berry nut bread. Let me know if you want any of these. I'm more than happy to share. icon_lol.gif

I just made some yesterday and it is gone already, here is mine!
1 c sugar
1/2 c shortening
2 eggs
2 mashed bananas
1/2 c. cold water
2 c flour
1 tsp. baking powder
1 tsp baking soda

Mix shortening and sugar, beat in egg yolk and banana. Add cold water. Then add sifted dry ingredients. Fold in stiffly beaten egg whites.
Bake at 350 for an hour.

Here's mine that always gets raves. It's very moist and full of banana flavor:

Banana Bread

¼ c butter
1 1/3c sugar
3 bananas smashed up
1c sour cream
3 tbsp vanilla
2 eggs
2c flour
1 tsp baking powder
1 tsp baking soda


Cream butter and sugar in mixer⦠add eggs one at a time⦠add bananas, sour cream, and vanilla⦠sift dry ingredients together and add to wet.

325 degree oven for 40 â 50 minutes or until a toothpick inserted in the center comes out clean.

this is hands-down the best banana bread I've ever had. it bakes best in small pans. Sometimes I just halve the recipe because it makes a TON.

INGREDIENTS:
1/4 cup white sugar
1 teaspoon ground cinnamon
3/4 cup butter
3 cups white sugar
3 eggs
6 very ripe bananas, mashed
1 (16 ounce) container sour
cream  2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon salt
3 teaspoons baking soda
4 1/2 cups all-purpose flour
1 cup chopped walnuts (optional)

DIRECTIONS:
1.  Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
2.  In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
3.  Bake for 1 hour, until a toothpick inserted in center comes out clean.

My favorite has always been the Kraft recipe...the one with Miracle Whip! Even my fiance who hates mayo LOVES this banana bread!

I got this recipe from the late lamented Food Network discussion boards. It is CRAZY good. Buttermilk and cream cheese, oh my! icon_eek.gif

Banana Nut Bread ala Paula aka Mecookin
makes 2 large and 1 small loaf

8 oz. cream cheese, softened
1 stick unsalted butter, softened
2 cups granulated sugar
1 cup light brown sugar
3 eggs
6 bananas mashed
1 tsp. vanilla extract
4-1/2 cups sifted all-purpose flour
2 heaping tsp. baking powder
2 heaping tsp. baking soda
1 tsp. salt
1-1/4 cups buttermilk
1-3/4 cups chopped pecans or walnuts
Cream butter and cream cheese, add sugars and beat until fluffy. Add eggs, one at a time, beating after each addition. Beat in bananas and vanilla. Combine flour, baking powder, baking soda and salt. Add alternately to creamed mixture with buttermilk. Fold in pecans. Bake in 3 greased loaf pans at 350 for 40-45 minutes until bread pulls away from edge of pan.

hey!
I got mine from my 3rd grade teacher, it's extremely addictive....
it's NOT cakelike, it's more dense, yet tender. i'm on my way out the door, but want you to know it's coming.
i've tried tons and NONE compare....
i agree with above post, that mine bakes better in smaller loaves (it gets more of a rise that way?)

1/4 cup butter
1 cup sugar
1 egg
1 +1/2 cups flour
3 ripe bananas mashed
1 tsp baking soda
1/4 tsp salt
1/2 cup mini choc chips (the large ones will sink to the bottom of the bread!)

Cream butter, add sugar and mix well. Add egg and beat until creamy. Add mashed bananas. Add dry ingredients and mix well. Add in choc chips. Bake in large loaf pan or 2 small ones at 350F for 40 mins or until tester comes out clean.

O.k. as funny as this may sound my favorite banana bread recipe (so far those others look like something I want to try) is a recipe I got from www.nickjr.com. It's Blue's Clues banana bread and the batter tastes like cookie dough. It is yummy. as promised...

1/2 c. butter (4 oz.)
1 1/2 c sugar (11.25 oz.)
2 eggs
1/4 c./4 tablespoons buttermilk
1 1/2 c. flour ((7.1 oz)
1 tsp. baking soda
1 tsp. vanilla
pinch of salt
3 ripe bananas, mashed
**optional, 1 c. chopped pecans

Cream margarine, sugar, eggs, vanilla. Add milk. Add flour, baking soda, salt, and mix well. Add bananas and nuts. Mix. Pour into greased/floured pans (or use generous amounts of baking spray). Bake for about 45 minutes. Cool for a few minutes, then turn out.

It can bake two standard loaves or 4-5 mini loaves.

If your family loves banana bread, I have a recipe for a Banana Chiffon cake that tastes just like banana bread. Great for those crazy people that don't "like" cake.

BANANA CHIFFON CAKE (Lynda Joy Maximenko)
2 large eggs , seperated
1 + 1/3 cups sugar
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/3 cup oil
1 cup mashed banana
2/3 cup buttermilk
1 tsp vanilla
1/2 nuts ( if desired)

1. Beat egg whites until stiff peaks form

2. Gradually beat in 1/3 cup sugar and continue beating until glossy (set aside)

3. In seperate bowl, sift together remaining sugar, flour, bkg powder, bkg soda, nuts & salt.

4. In another bowl, add oil, mashed banana, half the buttermilk and the vanilla.

5. Beat liquid ingredients for 1 minute on medium, scraping sides constantly.

6. Add remaining buttermilk & egg yolks.

7. Beat 1 minute longer

8. Mix in dry ingredients & beat for 1 more minute.

9. Fold in beaten egg white mixture.

10. Put mixture evenly into 2 pans.

11. Bake @ 350 until side start to pull away & poke test comes out clean.

I was shocked by how much this tasted like banana bread. My SIL doesn't like cake & this is always her request for her cakes.
