I'm making a cake for my brothers birthday. Does anyone have any "fancy" filling recipes or ideas? Both my brother and his wife are chefs and I want to try to do something REALLY amazing to impress them.

Maybe a mango filling? I've never tried this but I thought it would be good to have a coconut cake with mango filling in it. There's also Bavarian cream and strawberry that's supposed to be really good together. Just make sure you double the sugar and yolks accordingly when making it... if not, it tastes like plain unsweetened whipping cream.
