i know this may be cheating, but this is what i have done in the past and everyone has loved it!!! I make a plain yellow cake batter, pour 1/2 the batter into the pan, crush about 24 oreo cookies (more or less depending on the size of the cake) then spread evenly on top of the batter already in the pan and then pour the rest of the batter on top of the crushed oreo cookies. This recipe works especially well if you are doing a tiered or stacked cake, because the cake then becomes heavy and already layered cake and strong enough to hold another cake on top of it, plus some of the cream from the Oreo itself makes the cake even more moist.

It really is great!! I have made it several times and everyone raves about it and as I said, if you use it as a bottom tier cake, it is very sturdy! Enjoy! Let me know how it goesicon_smile.gif

Do the cookies sink to the bottom or do they stay in the middle?

They stay right in the middle; when you sprinkle them on the bottom layer batter, t hey sit right on the batter and stay that way when you pour the top batter and the cookies don't burn when the cake is baking because the batter seems to protect them. When you are ready to cut and serve the cake, it will look like just as if you had torted the cake and filled.

What a great idea! I will definitely be trying that...my husband is an Oreo fanatic! I am guessing chocolate chip cookies may work as well.

Now I'm HUNGRY!! I was going to take a week off from baking/decorating while my house is torn apart by contractors, but this sounds too yummy not to make! Thanks for sharing.

I'm thinking of making this cake this weekend. since it already has oreos in the middle, do you bother adding a cream filling when you ice it, or are the cookies that are baked in enough? icon_sad.gif

I personally have never added a cream filling, becasue I have found that the cookies are enough and make the cake moist. Also, another cream filling may take away from the "Oreo" filling - both filling tastes may contrast. You may want to try it both ways (if you have the time) and see which you prefer. Let me know, I am curious how adding the cake would taste with another creme filling. Good Luck

I add about 3/4 cup crushed cookies to the cake batter and fold it in. Bake as usual. I don't add extra liquid. Then I fold in 1/2 cup to 3/4 cup crushed cookies to the icing as well--buttercream or cream cheese--yum!
