My friends little girl has lots of allergies, so she thought perhaps a rice krispy treat cake would be better, problem is the little girl can't have butter. Anyone know if I could just leave it out, or substitute something for it? Any advice would be appreciated.

Can she eat margarine? I've seen some olive oil spreads at the grocery, but not sure if they include dairy or not. I don't really think they would turn out right without the butter. Maybe add a little water like you do when making mmf?
I use it to melt the marshmallows so they don't stick to the pot, I would assume you could use a type of oil that would be suitable, not olive oil, and add butter flavor if you wanted the taste.
if you have a real good no-stick pot to melt the marshmallows in, maybe then you would not need butter for the stickiness.
I leave the butter out all the time (reduces the calories) They work fine, just a bit sticky. When you press the stuff into a pan, use oil on your hands or waxed paper (even silpat) to smash the mixture.

Popcorn Cake

Prep Time: 8-10 min
Bake Time: 5-7 minutes
Recipe Yield: 10-14
Ingredients:
1/4 cup oil
2 tsp. vegetable oil
12 cups popped popcorn, plain, unsalted, and unbuttered
2 cups m&m's candy
1cup lightly salted cocktail peanuts
1 lb marshmallows
1 stick unsalted butter
Any of your childs favorite candy
Directions:
1: Grease a large tube or bundt cake pan with 2 tsp. of oil and set aside.
2: In a large bowl, mix the popped popcorn with m&m's and peanuts.
3: In a small saucepan, melt the butter, remaining 1/4 cup of oil and marshmallows over med-low heat, stirring occasionally.
4: When melted, pour over popcorn mixture and stir to combine. Pour into prepared pan pressing down to fit. Cover with foil to keep moist.
5: Let rest until firm 3-4 hours. To serve invert the cake pan onto large plate, shake gently to release. Serve at room temperature.

I just read one of Jennifer Weiner's books (I think it was "Goodnight Nobody") and her main character was making her kids rice krispy treats by adding the cereal to Fluff. I thought that that was pretty smart, and something that I would like to try one of these days. If you do, let us know how it turns out!
