ok i just couldnt wait to make this cake and try the juice. i am using bc cake mix. on the box it says you should get 2 8 inch cakes. however i was only able to get on 8 inch. i did have batter left over so ni it did not take a whole box for one layer but there wasnt enough to make a second 8 inch. this is my first carrot cake from mix to make., is this normal?????

How did the one cake bake up??? I would think that this isn't normal.....I always get two 8 or 9" cakes from a mix.

it is in the oven now. so i wont know for a litle while.

Hmm, that's really wierd...let us kjnow how it bakes up.....do you know how much batter it made...cups that is???

well i always put 4 cups of batter in my 8 inch cakes. i got that number off of wiltons web site. so 4 cups in the pan i had enough left over to do a 4 inch heart. it was thicker than normal cake mixes but since i havent used a carrot mix before i wasnt sure. it smells great so far.

ok so the 4 inch heart is out and cooling. it looks great. it baked nice and level smells great. the 8 inch has about 10 to 15 more mintes to cook. But when i took the heart out the 8 inch looked great. hopefully it will come out great as well.

Hmmm, I haven't used the carrot cake mixes but maybe they just make less....but then if the box says they make 2 8" cakes....I don't know, it's a mystery! icon_lol.gif

ahhh crap!!!!!!! the ten minute was up so i go to check the 8 inch cake. at first site it appears to be done. as soon as i touch my oven rack to pull it out the center giggles and then........... it fell. i quickly shut the door and set my timer for 10 more mintues. i just peeked in on it and the center has come back up. now i am scared to touch it.

Is your pan a 8 X 2 or a 8 X 3" pan?

its 8x2 ok im ok the cake rose back up and it is cooling now. i have to change my idea for this cake since i dont have 2 8 inch but i can make it work............ i hope.

well i tasted the heart my wonderful 2 year old son told me he wanted some bread so i said ok he climbed up on a chair and grabbed the heart and broke it in half. he thought it was bread. let me just say it tasted GREAT it was sooooooo moist. so yummy. i reccommend using the fresh carrot juice. i made anoth batch and it came out not as thick as the first. i think it may have been the mix. oh well its taste great i am happy i know my mom will love it.

Yummy, carrot cake is my absolute favorite.

What kind of icing are you making? Cream cheese is the best but I've never made anything other than BC.

Can you decorate with cream cheese icing anyway?
