I'm dying to try this in a cake or a frosting....has anyone does this? Please share your experiences with this stuff.

I have made dulce de leche ice cream cake. It is yummy.
I think the caramel can be made by simmering a can of sweetened condensed milk (unopened) completely covered by water in a pan on the stove for about 3 hrs. You might want to check that method out. Maybe you could mix it into some IMBC. That would be really good.
