I am doing a Baileys Chocolate Cake and want to use a Baileys IMBC for the filling, but can I add Baileys to the IMBC without it breaking down?

Also, does anyone who uses the Double Chocolate layer cake recipe (from Epicurious) know how much Baileys I should add to the recipe and if I should substitute it for part of another ingredient like the coffee?

TIA

Kelly

Because Bailey's is sweet to begin with it may make the icing too cloyingly sweet. But you won't know unless you try a taste test. Make a batch of IMBC, spoon a small amount into a bowl and add drops of Baileys, taste as you go until you think it is enough. I have added just about every liquere I can think of to IMBC, some are great, some are so so and some just don't taste good. Experiment.

If you have Pastry Pride in your area the Bavarian filling I have posted is very good with Bailey's added to it. I would also make a simple syrup and flavor it with Bailey's to brush on the leveled cake layers before filling and frosting. Then ice with regular flavored IMBC.
