My top faves of mine are:


- Sour Cream White Cake, or Sour Cream Choc. Cake
- White Chocolate Cream Cheese Filling
- Vanilla Buttercream

- Sour Cream White Cake
- Homemade fresh strawberry filling
- Vanilla Buttercream

- Sour Cream Choc. Cake
- Oreo Pudding (not the kind in the box that JELLO makes)
- Chocolate Frosting

- Cinnamon Snickerdoodle Cake

I get mine right from the liquor store. I started with the small bottles like grand marnier and godiva chocolate liquor then it made $$$ sense to buy the larger ones. I also have Kirsch, Black hause schnapps and kahlua to name a few.

Thanx rezzycakes! now if I can only find an excuse to buy tequila for those margarita mixes that seem to pop into my salt-rimmed glasses every now and then, I'll be good to go. Any tequila flavored cakes or fillings out there???? Just kidding.....

I baked the pink champagne cake today that cowdex posted on another thread. I filled it with an easy white chocolate filling that someone posted on a thread (I couldn't find the thread again, but it was 1 box of white chocolate pudding and 1 1/2 cups heavy cream). Frosted with BC. YUM!!!

Someone just posted a picture yesterday of a margarita cake . . . lime curd filling with lime buttercream on a tequila flavored cake. It sounded delicious . . . it was even decorated to look like a margarita in that it was rimmed with sugar crystals and had limes in the middle. I'll have to look up who posted it.

Simple as it may be - my most requested for wedding cakes these days is my almond cake with cream cheese filling. (happened by accident but it is GOOD!)

Another option - almond poppy seed! I turned my nose at the request at first but I could eat that for breakfast, lunch and dinner!

ckkerber: I did a search for photos posted yesterday, but the margarita ones posted didn't say anything about fillings or anything. I bet that would be a great flavor combination, especially during the summer!! Maybe someone out there knows how to make it???

Sorry it took so long to post this.. I've been having a lot of trouble uploading. (on my side)

Raspberry Mousse Filling

1 tablespoon water
1 tablespoon raspberry liqueur (like Chambord)
1 teaspoon unflavored gelatin

1/4 cup pureed frozen raspberries (sieved to remove seeds)

3/4 cup whipping cream
2 tablespoons granulated sugar
1/2 teaspoon vanilla extract

Combine cold water and 1 tablespoon liqueur. Sprinkle gelatin over and allow to soften for 2-3 minutes. Microwave on high for 20 seconds and allow to stand for 2 minutes or until granules are completely dissolved. Combine puree with gelatin mixture. Refrigerate until syrupy. (If gels too quickly, simply warm again.)

Whip cream with sugar and vanilla until stiff. Fold puree/gelatin mixture into sweetened whipped cream. Refrigerate until ready to use.

I've never tried it that way, but I think it would take away from the natural raspberry flavor.

One of my special requests from my friends is a lemon cake with a raspberry filling.  I have a specialty cupcake that I love-I make a red velvet cupcake with cream cheese frosting and a red raspberry drizzle on top.
