Strawberry Whipped Cream Filling

I'm doing a wedding cake in less than two weeks. It is chocolate cake with strawberry whipped cream filling. I had done the whipped filling with white cake before and had no problems, but when I did the practice run with chocolate the filling didn't hold up well. I think maybe because the chocolate cake is so much denser than the white. Anyway, I wanted to try one more filling before the actual wedding cake. Has anyone tried the strawberry filling on the wilton site? It has fresh strawberries, gelatin, whipcream, and water and sugar. I'm just wondering if anyone has tried it and if the gelatin helps the filling from flattening out? Can I add extra gelatin to make it extra thick? There is also a recipe for pastry cream on wilton. It has cream in it and egg yolks, but it's not whipped. Has anyone tried this? It seems like it would be thicker, but would it taste good? CAn I add strawberries to it? Any help would be appreciated.
