I have never done cookies on a stick. Please forgive me because this probably seems like a dumb question to you guys, but how do you get the stick in the cookie? Do you put it in before or after you bake it?
It can be done either way.
I prefer to put the stick in before baking, because I'm usually rushing and don't want to have to stop what I'm doing to get all the sticks in the baked cookies as soon as I get them out of the oven, before they stiffen up and won't let me put the stick in.
There have been several threads about this in the last couple of months, you may still be able to find them doing a search and get lots of opinions quickly.

This is not a stupid question! I prefer to put the sticks in before I bake. I cut out my cookies, put them on my cookie sheet and stick them in the freezer for about 10 mins. Then I gently put the sticks in. Putting them in the freezer helps them hold their shape and makes putting in the stick a lot easier.
For the first cookies I ever made, I entended to use the white sticks but found out there are to big. You have to make really thick cookies if you want to use those sticks. I ended up using skewers for the sticks because that is all I had around and it worked great, now that is all I use.
I have only made a cookie bouquet once with not very good results, but hopefully my experience will help you avoid the same problems.
Try putting the stick in before you bake your cookies and put the cookies in the freezer for 10 to 15 minutes before you bake them. The one thing that I did not do but definitely would the next time is take some extra pieces of dough and place it on the back of the cookie where you inserted the stick. This will hopefully help the cookie to keep from falling off the stick after it is baked (as was my experience).

Another question, if you don't mind...... how thick do you rely your dough out to? I made cookies last week that were rolled too thick (IMHO) and tasted more like shortbread.

I like to stick the stick in the cookie before baking. You can make the cookie just thick enough for the stick to stay in place and not show through.
I like making the Wilton Roll Out cookie recipe. Is really good and easy and you don't have to refrigerate the dough. You can start making cookies right away.
I, too, put my stick in BEFOR I bake the cookie. I just didn't have good luck doing it after I baked. As for the thickness of the dough, I rolled just thick enough to: a. hold the shape of the design. and b. just thick enough to place the stick in without going through the cookie.(I'm guessing about 1/4 of an inch? I'm not very good at guessing things like that!...lol). My cookie bouquets came out pretty good and I had no problems doing it this way. There is probably a different, more SURE way of doing it, but this way worked for me. Good luck!
I like to roll out my dough 1/4" thick, and I'm a stick-them-in-after person.
I've used everything - lolli sticks, cookie sticks, dowels, skewers. No I only popsicle sticks and wooden coffee stirrer sticks. Michael's carries the popsicle sticks in boxes of 1000 for 2.99 and the coffee stirrers I buy at Smart & Final for 2.49 box of 1000 5" and 2.79 for a box of 500 7" sticks.
In the beginning I stuck them in prior to baking. Now I stick the sticks in as soon as they come out of the oven. I think the popsicle sticks are sturdier than the lolli sticks and easier to slide in after baked than putting them in raw squishy dough. The cookies also do not rotate like they can when on the white lolli sticks.
I noticed you were in Torrance and figured you might have both stores around you. I'm just about an hour away from you and have three Smart and Finals around me plus many Michaels.

I love using the flat sticks from Starbucks Coffee House, they always give me a handful when I visit and these adhere wonderfully to the cookie without making a "dent". I also like to soak the wooden sticks first, it adheres to the cookie better and doesn't brown while baking. Blessings, Shawn <><
