What kind of icing and fillings are you using?? That plays a big part in where to store it=) I bake my cakes a week before I plan to decorate and freeze them. Not only is this convient for me(I have a neck and back injury), but it also makes the cakes really moist. I pull the cake out the morning of the day I am gonna decorate it, to allow it to defrost. I make my icings the day before I plan on decorating. It makes it much easier for me to do it in steps=) But a good clue would be to know what kind of icing and fillings you will be using=) Jen
