I'd like to try this recipe since several CC members have mentioned they use it. I'd like to try it too.

I have it but not the directions!

2 cups of sugar

21/2 cups of all purpose flour

1 cup of unsweetened cocoa

1 cup of vegetable shortening

1 teaspoon of salt

2 teaspoons of baking powder

1 teaspoon of baking soda

2 eggs, room temp.

1 cup of milk, room temp ( I put my eggs into the cup of milk in my pryex measuring cup and then nuke it for like 30 seconds because I am too lazy to remember to pull the stuff out of the fridge before making the cake )

1 teaspoon of almond extract

1 teaspoon of vanilla extract

1 cup hot, strong coffee (has to be HOT!)



Bake at 325. I remember being told that the texture in the middle and outer edges will look different when finsihed baking and that initially the batter would be runny (that's okay). Also to let them cool completely because they will be fragile if you take them out too soon.


I have not tried this yet but am eager to.

Oooh - I have a different one - this is from her master class book it's called "Coco loco cake" - I usually omit the coconut, cuz it makes the cake really hard to torte.

Here's the one I have:

2 C AP flour
1tsp baking soda
pinch salt
1 C hot coffee (even if I just made it, I nuke it for a minute or 2 to make sure it's REALLY hot)
5 oz unsw choc, chopped into small pieces
2 sticks unsalted butter, cut into small pieces
2 C sugar
2 eggs @ room temp (mine never are)
2 tsp van extract
Optional - 1/2 C shredded coconut

Preheat oven to 275, prepare pans. NOTE: my oven refuses to heat at 275, so I always wind up baking this cake at 285, and even at that temp I have to bake it longer than the recipe says.

Sift flour, salt & soda in sep bowl, set aside.

In large bowl put butter and choc, pour coffee over and let stand covered for 10 min. until everything has melted. Whisk in sugar and let cool.

Whisk in flour mixture in 2 batches, then eggs and vanilla (and coconut if using). Batter will be on the runny side.

Pour into prepared pans and bake for 45 min (check after 30 min and rotate pans).
