Major Project ... Need Suggestions

I ended up booking a cake with the owner of a predominant B&B here. Upon booking, she also asked if we would be interested in doing some of her catering on the side. (My s/o does all types of food- I just do the cake!) So she asked us to make her a sample menu of what we could provide her with as far a breakfast "pastries" and such. It's not so much of a cake thing, but you all are so creative that I though my fellow cake brothers and sisters may just have an idea of what to serve. Breads, muffins, that sort of. I would like to have a menu set by Tuesday morning so please, FIRE AWAY!

There are very few things I like in life as much as breakfast pastries!

- Scones of all kind. Pumpkin, blueberry, chocolate chip with orange glaze, lemon, cinnamon chip.

- Cinnamon rolls

- Coffee Cake

- Muffins (pretty much any flavor) -- make sure and put a nice crumbly topping on them!

Bread loaves - Banana nut, pumpkin, blueberry...the usual suspects.

When I think of breakfast baked goods, I immediately think 1) blueberry muffins and 2) banana bread. But there is always the classics: danish, croissants, any flavor muffins (including bran). Scones are always good. I make a killer toffee/chocolate chip scone my family loves.

The great thing about those is how many flavors you can do.

muffins: blueberry, cranberry, pumpkin, apple, poppyseed, dried cherry w/ almonds, bran w/ dried figs, whole wheat with figs or applesauce or dates.....and the list goes on and on

scones: cherry, chocolate chip, toffee, orange, dried apricot

danish: any fruit, cream cheese

And what about savory stuff? Cheese croissants, cheese & ham scones, or some kind of breakfast casserole or napolean using eggs and bacon or some neat sausage?

Is that the kind of stuff you were looking for?

individual portions of monkey bread (make in muffin pan -- reg. or TEXAS sized!)

make muffins in the mini size so can sample more flavors w/ less guilt (or eat in first place if on diet)

croissants

strudles

elephant ears

yeast donuts

bismarks (filled donuts)

crullers

not cake...but breakfast burritos and tacos?
