also what could i use to extend or enhance to cake?????

thanks everyone....i can use all the help that anyone can give....today is one of those days that i really don't feel that baking, got a crappy attitude this morning icon_cry.gif & i'm sure already that things are gonna go to crap before i can get it done........but i'm still goona get up & get to work (as soon as hear from ya'll)

I made this recipe for my daughter's 2nd Birthday. We all loved it. It's not too intense, but then again... we are chocolate people. As far as extenders go... bump.

Hope your day gets better. Somtimes I make the best stuff when I'm in a crappy mood though!

I used it for the deer cake that is in my pictures. I extended it using white chocolate pudding and sour cream. It was soooooo good! Everyone kept talking about how moist it was......That was my first time using it, so I was a little scared- but this is the only one I will use from now on.

It's the only one I use for my chocolate cakes and everyone loves it. No clue about extenders, but I always make it like a pound cake - add 4 eggs, 3.5 oz pudding mix (dk choc is best), 1/3 cup oil and 1 1/3 cup water. It gives it more density.

I also use this cake exclusively for chocolate cake. I, personally have never liked Devil's Food, but if you do, you might not like this one as it is really chocolatey.

I have made it with extenders and without; with, it takes longer to cook and can almost be too moist. Most recently I only adjusted by putting milk in instead of water and it it worked out great.

Good luck!

This is the only cake I use for my chocolate loving friends....... MANY years ago, Helman's had a recipe out for a good chocolate cake..... My Mother used to make it........ Well, I adapted that recipe for box mixes........I simply substitute Helman's Mayo for the oil in the recipe, and it makes the BEST, and most MOIST cake you will ever eat....... I have never had a complaint, and no one can figure out what I do different....... It doesn't matter what the flavor of the cake is..... you can do it with all of them........

I have heard of it- but never done it personally! My kids would never eat another cake of mine if they knew I put mayo in it! LOL!

For a more chocolatey flavor, use chocolate milk for the liquid instead of water; add 1 tablespoon of brewed coffee (as part of the liquid) to bring out more chocolate flavor

Doug, do you mean my Mom's recipe ? I don't have it any more, but I'm not kidding when I say substituting the Mayo for the oil makes it taste just like the Helman's recipe........ I'll "Google" it and see if it is still floating around out there........

Here is a site that has the original recipe.... but I think DH with the mayo is better..... http://www.starchefs.com/chocolate_lovers/2002/html/march/recipe_04.shtml

DOUG.........What ever oil is called for on the box, I use Mayo instead........ really, what is mayo other than oil and eggs ?

I love that chocolate cake-I do extend mine/doctor it a little, but it is great right from the box.

Here is my extender recipe:

1 box mix plus all of the ingredients called for on the box
In addition:
1/2 cup oil (or butter, I use butter and cream it first, then add the other stuff)
1 cup flour
3/4 cup sugar
1 tsp baking powder
2/3 cup water or milk (I use milk)
optional: I add 1 tsp vanilla and 1 tsp almond

This is enough for about 1 8x3 inch and 6x3 inch cake round
1 12x2 inch round
1 10x3 inch round
1 8x3 inch round + 12 cupcakes
It makes about 7 1/2 cups batter

As for the mayo thing, I havent tried it, but I have even recently seen the recipe on the side of the mayo bottle...

I like this, the DH Dark Chocolate but I actually prefer the pillsbury dark chocolate, it has a richer flavor when used with the extender, JMHO...

so from the other posts can you add miracle whip instead of the mayo, or will it give it too different of a flavor.
