Is there a way to make the ASCC less sweet? Can I simply add less suger or will disrupt the texture? Also, what can I use to make it a little more dense?

I want to cover this cake with MMF, so I would like some a little less sweet sinc the MMF is so sweet but also firm enough to hold up stacked and with MMF.

HELP!!!!

You can try adding a pinch of sugar to cut down on the sweetness and add 1 teaspoon of meringue powder to firm up the cake. I have read where people add as much as 1 tablespoon of meringue powder but I have never tried adding that much!

Are you talking about the recipe that you add like sour cream, a couple cups of sugar, couple cups of flour, etc to it?

I love that recipe! What I have done is add whole eggs instead of eggwhites and use 8 eggs. It comes out very dense and moist and rises perfect! I have used it for several 3 and 4 tier wedding cakes with no issues.

I wouldnt mess with the sugar content at all
But you can add some salt to the MMF if you dissolve it first.
You can add a little salt to your cake mix too
