I need some help with pricing the two cakes made by boween. I am going to attempt to make similar cakes for a bridal shower. I have sent her a pm but I need to give a price now. I have the pricing matrix but it's confusing me.

I need to make enough cake for about 35 people. She wants either 10 inch hearts or 12 inch hearts so I need to price both. They will be double layer decorated in buttercream, filled with raspberry preserves and accents made with fondant. When I type in 4 in the pricing matrix for the cakes, it gives me a really high price. I think because it is including time to make 4 individual cake rather than 2 two layer cakes. I mainly do sheet cake for kids so I am struggling with giving her prices for both the 10 & 12 inch hearts.

What is the price matrix and where do I get it from. Also what is the price matrix saying?

One reason you are getting a high # on the matrix is that it is set up for wedding cake servings. For party servings a 2 layer heart: 8in serves 18, 10in 24, 12in serves 34. so it sounds like they really need more of 2 8 in cakes. I don't know what boween's look like so I can't help on pricing. Alot will depend on your area too.

bubbies-do a search in the forums for pricing and matrix and it will come up.

This matrix is set up based on the creators recipes so you have to be able to tweak it for your own. I am in the process of doing that now but it can be time consuming.

Here is a picture of the cake I will be attempting to make. Mine will be two 12 inch hearts, double layers with raspberry filling. The cake pan says 7 cups of batter. I had to get full sheet cake boxes since the 14 inch cake boards wouldn't fit a 14 inch cake box icon_confused.gif

If I type 4 layers in the pricing matrix it says I should charge $100. It says two double layer 12 inch hearts will serve 52 pieces. That really confused me since it takes the equivalent of 6 cake mixes but only serves 52 pieces. My 11 x 15 sheet cakes take 2 cake mixes and I know they cut 35 2 x 2 x 2 pieces so I wonder why you can only get 52 pieces from these cakes. icon_cry.gif I wonder if it means you will get 52 2 x 2 x 4 pieces??? The client knows this will probably be twice as much cake as she needs, she's more interested in the presentation of it. I just can't come up with a comfortable price especially when I am so confused. The matrix also says I will need 12 batches of buttercream for the two cakes. I don't see how I would need that much icing. I think it is figuring it up like it was 4 one layer cakes, help!!! icon_cry.gif
