Bon Soir, Doudoun,

Not all cookie recipes need cream of tartar. Please post the recipe and it will be easier to explain.

Again, depending on the recipe, sometimes the dough can be frozen in advance, then thawed slightly, sliced, and baked.

Cookies can be frozen after baking, but it is not adviseable. Many times they turn out soggy.

Send us the recipe so we can help you with it.

You use cream of tartar as a leavening agent, such as baking powder or baking soda.
You can freeze your dough or freeze your cookies, just make sure to seal them properly to avoid your dough to dry out or your cookies to get moist.

Cream of Tartar is usually for Meringue...what does your recipe say ?
Follow the recipe. Cookies don't usually need it.. icon_smile.gif
