Hi there

I am desperately looking for a wheat-free vanilla cake recipe - I have a wedding cake to bake and the bride is wheat intolerant. Have spoken to a few people who recommend using rice flour but apparently this makes the cake texture very heavy and I am looking for something lighter like a sponge. Oh ans she can't eat cocoa either!

Would really appreciate any advice or a suitable recipe.

Usually, its been recommended that only one of the smaller tiers be made using the dietary restrictions.

That way, the guests who don't have allergies can have cake that they're really going to like.
