I'm currently in the process of doing all the paperwork and getting my kitchen ready for inspection to be licensed in VA. The brochures sent to me gave several options for sanitizing (bleach, etc.). Any opinions on what is the easiest or works the best? I know some people use tablets--where would I get these? For cleaning counters and equipment, would any household cleaner work? I called to ask, the man I spoke to said he "thought" a household cleaner would be fine but I want to make sure the inspector will think so! Thanks for any info!!!

You should have bleach 'standing by' with the rest of your cleaning supplies (safely away from any food). Also, regular household cleaners will be fine. The easiest sanitizer is a bucket of clean water, a portion of bleach and a clean cloth-always available for use.

The tablets for dishwater are usually at restaurant supply stores, and perhaps a cleaning supply companies.
