Hi!

I am currently taking an elegant fondant class. On Monday I have to bring to class two cakes. Since I will be leaving from my full time job to go directly to class I will have to cover with fondant Sunday night. (Since I already know how to do that)

My question isshould I refrigerate the cakes after I cover in fondant or leave at room temperature?

Appreciate the help!!!

Thanks!
Peggy

I would not refridgerate them, they will be fine.

I use perishable fillings so I always refridgerate my fondant covered cakes. If you filling isn't perishable there is no need to refridgerate it.

I think only MMF can stand the fridge ( it was on another post )
But never tried it... icon_wink.gif

I use Pettinice brand fondant and you can refridgerate it. I do all the time without any problems. The only thing is that is the summer when it is really hot (I don't have air conditioning)you need to bring it to room temperature slowly to avoid condensation issues but it will disappear anyway after coming to room temp. The rest of the year I don't have any issues with condensation--it's just in the summer.
