Having Trouble Searching

I have a question about sizes of cakes and numbers of servings (for a wedding of about 400-500 people), what sizes to stack, when to do side sheet cakes, etc. I know this has been talked about before and I would like to find the old posts but I don't have tons of time to look through all of them. I've used the search area but it brings up recipes and other pretty random stuff, I must be doing this wrong! Any suggestions?

Hey Kate,

I use Earlenescakes. Just go to Earlenescakes.com & search for it on her site. Her site gives better numbers. I use her chart everytime I make a big cake! You'll enjoy her site to! It's awsome!!

Hey TC, would you take on a project this size? I'm still haven't committed to it yet because I don't know if I can handle the logistics out of my home kitchen. The storage for frosting and cakes alone is going to be huge!!! What do you think? This could be my first BIG time order but I don't want it to be a flop, maybe it would be smarter to decline? I need some direction icon_smile.gif

WOW, that's alot of cake...I went to Earlene's chart to see how many cakes would be needed because I wondered if I would take on something that large. I decided I probably could if I have plenty of notice and the design wasn't too intricate but, I have 2 deep freezers and 2 refridgerators, and I wouldn't take on any other orders for about a two week span if I was to take an order that large. Just thought I'd share my thoughts on it with you. Good luck with it if you decide to do it and make sure you post your picture of it! icon_biggrin.gif

I would definetely recommend to her a nice small to medium sized cake design, with sheet cakes on the side to help fill in the rest of the servings.

Thank goodness she is reasonable about this, she just wants 4 layers of basketweave with possibly 2 side cakes, no other flowers because she's using fresh, and then the rest will be sheet cakes. What size layers would you use for the main cake?

Maybe do a design with 16, 12, and 8 inch square cakes.
