Anyone have a good recipe for a coconut filling that they would be willing to share?

Please something that you have made and that is well liked.

Also, what flavor cake goes well with it? I was thinking white but I'm open to suggestions.

Here's a recipe I have:

Coconut Cream Filling
6 egg yolks
3/4 c. sugar
6 tbsp. cornstarch
1/8 tsp. salt
3 c. milk
4 oz (1 1/2 c.) sweetened flaked coconut
1 1/2 tsp. pure vanilla extract

In a large bowl, whisk eggs until slightly beaten. Set aside.

In a saucepan, combine sugar, cornstarch and salt. Gradually whisk in milk. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil (10 min.) Remove from heat.

Whisk in 1/2 c. of the hot milk mixture into the egg yolks to temper. Slowly pour warm yolks into the saucepan, stirring constantly. Cook slowly, stirring constantly, over medium-low heat, until mixture begins to bubble (5 min.) Remove from heat. Stir in coconut and vanilla.

Transfer filling to a bowl. Cover and chill (1 hr.) until firm before filling cake. Makes 4 cups.



Of course, you could also just purchase the Jell-O coconut cream pudding, add the milk called for plus 1 cup of heavy whipping cream and a tsp. of vanilla and voila, you have a coconut cream filling.
