Hi,

I am trying desperately to get a not too sweet buttercream recipe. Can any one share with me? icon_cry.gif

I generally use the standard Wilton buttercream recipe, but I add 1 tsp. vanilla flavoring, 1 tsp. butter flavoring and 1/4 tsp. of the almond flavoring. Then I always add a pinch of salt. This usually takes away some of the sweetness. But I think the trick is only a little bit of the almond flavoring and the pinch of salt. I get a lot of compliments on my icing and people say it's not too sweet. But again, the salt makes all the difference. Hope this helps.

Use lemon juice instead of water or milk in your favourite recipe. But a word of caution, it will bleach your colours out if you need coloured icing.

Italian Meringue Buttercream is what I use. It is made without using powdered sugar, and the butter gives it a lot of flavor. I've never had anyone say it is too sweet.

Exactly, to me these are the "true" buttercreams. Smooth and not very sweet. There is also the Swiss and other Meringue variations out there to try.
