I have to do a 12x18 birthday cake for this weekend. Since it rises so high, do you usually tort the cake or do you make 2 cakes and place them on top of each other? That seems like an awful lot of cake.

That IS a lot of cake!

I shave off the "domes" and torte mine. The "domes" either get eaten by teenagers for snacks, or saved for cake balls!

I usually don't tort the cake unless the person wants me to. I have two different prices for tirted cakes and non-torted cakes. Naturally the torted cake will cost more. Most of the time if its for a child's party they don't usually want it torted. I would ask the customer whether or not they wanted it torted.

I always tort my cakes... A couple of times more cake was needed and then I would use two cakes with filling in the middle.
