Cake Height...???

This is probably a silly question, but I have to ask...
When I look at all the cakes, especially the round ones, how do you get them so high? (I don't even know how to phrase this). I mean, do you stack 2 cakes on top of each other? I've made a round cake and torted it, and filled it, but it's still not as tall as others I've seen. Especially the tilted whimsical cakes, the tiers are really thick. Sorry if this is an obvious question... icon_redface.gif

Some cakes are three layers...I think the whimsical ones are.

Some people use 3" high pans.

Or you can collar your pans so you can put more batter in and make each layer taller. icon_biggrin.gif

I was wondering the same thing last night. I only have 2 inch pans, and would like the cakes for my wedding cake to be higher. I'm using 2 layers and torting, but they still don't look as high as I would like. I'm dividing one mix between two 8 inch pans. I guess I need to put more batter in and collar the pans to see how that works.
