Doubling Batches

I've read that you can't just double a recipe because sometimes it will not work. my question if I'm using cake mix can I double. does the same rule apply if I mix separate then unite the two batches?

I have doubled a cake mix before and it works!

I have a rule when I bake to double everything so I always have something for the unexpected. You hve to keep in mind the size of your mixer though. Any leftover batter can be used for cupcakes. I sometime double scratch recipes that I am very familiar with.

i don't like to double scratch cake recipes, however ihave qith cookie recipes. I will (and have the room ) to double up box mix recipes and it always works just fine. The cake mixes are made so they are really hard to mess up though so you don't have to worry quite so much about the chemistry of the mix.

Sometimes it works, sometimes it doesn't.

I wouldn't attempt to double unless you are using a large capacity stand mixer. A hand mixer usually can't handle the work and the smaller stand mixers usually don't have the volume.

I think the quality sometimes suffers a little bit even it is possible to double. And it doesnt' take all that long to mix up a cake, so I don't hink I've saved anything. I also don't like to bake too much in the oven at one time - but if you have two ovens, that might not apply to you.

What I do is measure everything out for 2-3 batches at a time (you can use lots of bowls, or just dump onto paper plates to save the clean up). Measuring is what takes my the most time, so by setting everything out ahead of time in this manner, I find my time in the kitchen is reduced and I still get to bake the cakes one batch at a time.
