I am making my SIL's graduation cake and we have the square set of pans (8,12,16) if she is having between 80 and 100 can I use the 2 smaller layers (2 layer cakes)?
According to Earlenes serving chart, that would give you 84 wedding size servings. To me, that might be cutting it a little too close. If you are having other food/desserts then I think it would be fine. I am always afraid of running short but that is just me!
Ok, I use a doctored cake mix by adding 1 cup sour cream, 4 egg whites, 1box instant pudding, 1/2 tsp vanilla, 1/2 cup water, and 1/3 cup water. how many do I need for each of the cake pan sizes. I use one box for the 8 nch but I can't even think right now of the sizes i need for the 12 and 16 inch cakes. I am too stressed thinking about packing.....lol. I think my brain stopped working. Would it look dumb for me to use the 16 inch and the 8 on top? The top layer is going to be angled so they aren't sitting flush.

You need to see how much batter that receipe makes. A standard box "mix makes about 5 to 5-1/2 cups of batter. An 8" pan takes approximately anywhere from 3 to 5 cups of batter, depending on the depth of the pan. They can be filled 1/2 to 2/3's full, so the amount of batter can really vary~
Also, noted that your recipe has 1/2 cup water and 1/3 cup water..is that right or is it oil?
An 8" on top a 16"? That's a preference thing! Perhaps if you set the 8" to the back and use the front/top of the 16" for your message or something. Just a thought!

Opps! told you I was stressed it is a 1/3 cup oil.......lol. I called adn she said a lot of people didn't RSVP so she doesn't think there will be 80 people there.
