Hi All,

I was wondering what everyone's favorite cake flavors and complementary fillings are. What have been your best received cakes!

Thanks for the input......I'm trying to think out of my box of Duncan Hines...ha ha ha....have 3 cakes to make this weekend and I want to try something new.

I made a banana pecan cake that was so tasty! My dh HATES to eat bananas but he was so willing to eat the cake! To a box of yellow mix I added - 1 box banana pudding, 4 eggs, 1 tsp almond extract, 1 cup water, 1/3 cup pureed bananas (approx 1 large) and the remaining pecans I had. I think between 1/4 and 1/2 cup. I had to break them up as I went along, so I didn't measure. Alternated with layers of choc-banana cake (you couldn't taste the banana there though, used it in place of the oil as with the banana pecan cake) and then iced and filled with a choc-banana SMBC. One tip though - use banana extract there though, my BC kept separating. but I used it anyway. Besides, it was a learning experience for me and a tasty experience for dh's co-workers! icon_biggrin.gif

I love Chocolate cake with Rich fudgy chocolate icing. My mother prefers White cake with white icing. My husband would rather eat pie icon_smile.gif I do a lot of cakes with tropical flavors because I live in hawaii.

My most popular cake at the moment is white chocolate coconut mud cake. Usually torted and filled with white chocolate ganache.

Everything sounds great! Where does everyone find their recipes??? Cake Bible, Cake Doctor, TV????? I want to try some flavored BC frostings but have been afraid that they will not turn out how I hope them to. I have been using the recipe from Wilton Cake Class....no butter...all Crisco.

I just made a French Vanilla/Key Lime cake for my mom's birthday{tomorrow}. The filling tastes fantastic,and I don't even like key lime pie. I just used the Lime curd recipe from the martha stewart website and mixed in a little Whimsical Bakehouse Buttercream and used that to fill the cake. I made two layers and torted each so I have three layers of the key lime filling. I can't wait to try it. I guess you could even add some lime zest to the cake mix to give it that extra lime kick.

My most popular cake at this time is my triple fudge with orange filling and orange choc buttercream.

I use a BC triple fudge cake mix and add a tsp of orange extract..mix according to directions. Then add a tsp of orange extract to my choc buttercream and I use orange marmaladr for the filling ....it's so good. I was making a mandarin orange filling but the marmalade tastes better in my opinion. It's a yummy cake

My 2 most popular right now are my special bride's white cake filled with fresh strawberries and stabilized whipped cream, and cocococonut cake with key lime filling (typo intentional - it's double coconut)

I have a tasting this afternoon with several summer and fall brides so I will let you know what books. Today I'm offering the above 2, then I have a French vanilla cake with raspberry BC, and my lemonade cake which is a lemon zest cake filled with lemon curd BC.

It's funny - typing about it here is making my mouth water more than preparing the sampling cakes was this morning! icon_biggrin.gif

The ones I've done recently are a DH Devil's Food Cake with Chocolate BC with fresh strawberries on top. Everybody had a fit over this one. My DH's favorite is my Butterscotch Rum cake with Amaretto BC.

I have found Colette Peters' books to be a great resource. She gives a basic recipe for cake and frosting and then tells you how to flavor it. I also ordered some flavorings from Earlene's cakes (www.earlenescakes.com I think) - I got one she calls Butavan (butter/vanilla I assume) an orange and a strawberry. The butavan is delish and very rich. I'm going to try making a caramelly filling and icing to go with it and market it as a "Dulce de Leche" cake. I'm also going to pair the orange with Colette's meringue buttercream and market it as "orange creamsicle". Also a favorite of mine (and I've been served this before under the name "opera cake") is Colette's coco-loco cake (although I leave out the coconut for DH's sake) filled with the meringue buttercream and frosted with chocolate ganache - it is to die for! I have to sit down and come up with a whole menu of cake flavors and filling/frosting flavors that people can pick and choose and then give them some recommendations.

My favorite is a Hazelnut cake layered with a chocolate fudge cake with a Nutella filling and frosted with chocolate buttercream and then a Milk Chocolate Ganache over top. I also like to do these two flavors in a checkerboard cake. I also like to put Irish cream cake with chocolate cake and an irish cream mouse as filling , frosted with chocolate buttercream and chocolate Irish cream Ganache. Another favorite is a Butter Pecan cake with pralines in it layered with a light chocolate cake or a coconut cake and Coconut pecan filling, frosted with either coconut pecan frosting, butter pecan flavored buttercream or a chocolate buttercream. Another good combo is a lemon cake layered with an White Almond cake with a raspberry or stawberry cream filling and then sliced strawberries or raspberries on top of the filling and frosted with a lemon cream cheese icing or an Almond buttercream icing.

I did a peppermint patty cake for Mother's Day. It was chocolate cake, peppermint buttercream and peppermint flavored mmf. Everyone really loved it.

My family is big peanut butter and chocolate fans. I like the peanut butter cake on this site and I cut each layer of the 2 layer cake in half and fill with creamy peanut butter. In between the 2 cakes, I fill with chocolate ganache. The whole thing is covered in chocolate buttercream. Serve with a big glass of milk. Yum!

They all sound so delicious....when to find the time to try everyone's ideas icon_smile.gif I am having such a dilemma trying to figure out what kind of cakes to make for my cousin's graduation party this Sunday. I was thinking a French Vanilla and a Dark Chocolate Fudge but what fillings???? I've been dying to try the caramel filling but not sure if it would be too rich with the chocolate and if it would blend right with the French Vanilla. Then I want to try to do a Chocolate Ganache filling and then...and then....and then...I just get carried away! I think I'm delirious. I am making his cake a 3 tier cake.
