Help...need Chocolate Filling Recipe

Does anyone have a good chocolate filling recipe. I'm looking for either a chocolate mousse or chocolate pudding.

I really like this recipe for chocolate mousse... let me know what you think

6 oz semi sweet chocolate, broken into 1/2 ounce pieces
1 1/2 c heavy cream
3 egg whites
2 T sugar

Place chocolate on top of bouble broiler and melt slowly.

Whip heavy cream in chilled bowl on high until peaks form.

Whish egg whits until soft peaks form. Add sugar and continue to whisk until stiff peaks form. Add 1/4 of whipped mixture to the chocoltae and whisk quickly.

Add to egg mixture and mix

Fold in rest of whipped filling just until mixed.

Refrigerate until needed.

I wonder If I could use a chocolate pudding in the middle as a filler??? I really don't want something w/raw eggs or gelatin as I don't want to take the chance of someone getting sick and I've never used gelatin before.

mmmmmmm.........I love chocolate pudding made with 1 1/2 cups of milk instead of 2......makes it thicker like a custard and it's richer in flavor...........yummy!!!!!!!

Ive never had anyone get sick from the eggs, but of course you can use pudding. I like Kozy Shack the best.

1 box of chocolate pudding mix
1 cup whole milk
1 cup whipping cream

put all in a cold bowl and whip until thick...makes a great mousse filling!

You can get the liquid egg whites at the grocery store. You can be assured then people won't get sick from those. I have a DH with a compromised immunte system and that's what I use. In reality, it is so rare from people to get sick from the whites.
