stiff holds a peak for a few seconds and well, never really goes back down; med. the peak would go down more & thin the peak wouldn go all the way back down.

If not, missbariton on here knows quite a bit about royal....im not sure if it's missbaritone or msbaritone.
Thanks! I am making my icing for Wilton Course III and I have used royal before, but did not know how to offically signify the differences. I did not take course II, timing didn't work out with my schedule.
There is an easy way to check if your icing is the right consistency. Simply touch the icing with the back of a teaspoon then pull it up sharply so a peak is formed
If the peak disappears back into the icing it's too thin for most things but can be used to fill runouts
If the peak bends over at the top it's the correct consistency for coating
If the peak holds for a couple of seconds then bends it's the right consistency for piping lines, shells etc.
If the peak stays upright it's the right consistency for pipng flowers
