Help! Freezing Question

I decorated a cake in butter cream with an edible image on Friday and stuck it in the freezer, because I didn't want the cake to sweat or dry out and there was not enough room in our fridge.

I can make room in the fridge if it's only for a few hours or half a day. I am trying to cut down on condensation so the edible image won't run, so I am thawing in the fridge. How many hours should it take to thaw in the fridge? I am wondering if I should take it out of the freezer tonight, it will be eaten around 5 p.m. tomorrow, which is about 19 hours from now. Should I just wait until in the morning to take it out of the freezer and put in the fridge? That would give it at least 8 hours or more to thaw in the fridge.

...and I guess I should take it out of the fridge about an hour before it will be served. Does any of this sound okay?

I would take it out in the morning and then a couple hours before serving you don't want it too cold to eat.

Thank you cashley. That is what I finally decided. I will take it out of the freezer tomorrow morning and stick it in the fridge and hope for the best. It is a birthday cake for my 16 year old cousin.

Thank you for the 2 hr tip. I was thinking 1 hr, but 2 sounds good to me. I don't have a clue. It's only the 2nd edible image I've done. The first one was just for practice and I let it sit out on the counter, but in a cake cover for a few days. By the 3rd day the image had completely melted into the icing and it still looked good. But with this cake having been in the freezer I wasn't sure about the ink possibly running.

I have never frozen a cake with an edible image.

Please let us know how it turns out...I have always been too afraid that it would run! icon_smile.gif

Good luck...and I am sure the cake will taste great even if it is cold! icon_biggrin.gif

I was leary of freezing a cake with an edible image until I read that they can be used on ice cream cakes, but then, you don't let the ice cream cake sit out long enough to really start sweating do you? Hmmmm! Oh well, I will learn a lesson here, good or bad. I also read that you should defrost in the fridge to cut down on condensation. I think I read all of this on the site that I bought the image from. Oh well.... I will definitely post the outcome.

Well, I don't have a complete story to tell. The mom who ordered the cake kept changing the date and time she wanted to pick the cake up. The last original time was to be at 5 p.m. today and they would cut the cake here at my house (they are my cousins). Anyway, the mom calls at 8 a.m. this morning saying that she will come immediately to pick up the cake as they have something else to do this afternoon. When they got her the cake had been out of the freezer and in the fridge for about 1.5 hrs. When they got here it sat on my counter for about 30 minutes. They had about a 45 minute drive home and the cake made it in tact. The birthday girl called me and thanked me for making her such a beautiful cake. Beyond this point, I have no idea how the cake looks. I will call them tomorrow to see how it held up.

I just checked with the mom, it's been over 24 hours and cake still looks good, or I should say, what's left of it. So I may have gotten lucky this time. Glad it's over.
