Hi Ladies!

I am new here and am hoping you all can help...

I am having two butercream issues.

#1: Air bubbles in my buttercream! I hate it! I want a super smooth look, and instead am getting tiny bubbles here and there.

#2: Roses. I can do them, but I want them to be smooth. They look frilly right now! It's like the icing breaks a little making the rose pettals look frilly instead of smooth.

Maybe what I really need is a good buttercream recipe. Or... maybe a few tips? I would post photos of what I am talking about, but don;t have them yet, so I hope this makes sense!

I went to a cake show last weekend and watch a buttercream demo. The gal said to get the air out of your buttercream to make smooth flower edges take a spatula and mash the frosting against the side of the bowl to mash the air bubbles out. Do not stir but mash. Hope this helps.

Regarding the roses...you can add a little bit of piping gel to your BC icing and that should take care of the frilly problem! icon_biggrin.gif
