How do you cool your 16" cakes I have the wilton cooling racks that will hold a 1/2 sheet cake but not a 16x16 cake. I have cooled the cake before in the pan and then flipped the cake over onto the board when the top was cool, it worked ok but it made it a little dense and wet! Any help or advice. THANKS

Kim

I have several plywood boards that I use as bases, I use these to flip my biggies out onto to cool. My bottom one goes straight to the board I am using to present the cake on.
