About a month ago I posted asking if anyone had any tips on a buttercream iced cheesecake wedding cake. Apparently it was uncharted waters cuz I really got no answers.
Thought I'd let you all know it went off without a hitch! It was incredibly heavy, but I assembled and completely decorated it here and then transported it on a 15 minute ride and carried it into the reception hall. It turned out well, if I do say so myself . The "sweating" wasn't an issue and the bride and guests all loved it. My brother happened to be there and said there were only about 5 peices left on the table.
So don't be afraid if you're asked...
Wow! That is gorgeous! How long did it sit out? Everyone tells me that about one hour is the max. Is this true???

One question, did you use a sponge cake or butter cake as a base for the cheesecakes?
This is really gorgeous, and I'm so glad to know that this is something that can be done! Is it dowelled and plated like a regular stacked cake?

How did it taste? Never had bc on cheesecake!

I'm not certain how long it sat out but I do know they kept it in the cooler until the guests arrived and dinner was at 6. I can't imagine it sat out much longer than an hour to an hour and a half.
I didn't use a cake base - just oreo cookie crust.
Buttercream was the regular consistency I use for icing traditional cakes.
Being that there were only a few peices left, I'm assuming it was pretty tasty! The bride was thrilled and said she got lots of compliments.
The buttercream wasn't too thick...I really just treated it as a regular cake, for the most part. Probably because I didn't know any better ! Plus I didn't want it to overwhelm the cheesecake.
It was so tall because I used 2" pans (Wilton) and filled them pretty darned close to the top.
I doweled it and used cardboard between layers.
Thanks so much for all of the great compliments. You know we're all our own worst critic and so many times I feel my stuff isn't "perfect enough". It's great to get a pat on the back from your peers!
that cake looks incredible......I can't even imagine what it weighed!!! Did you weigh the individual cakes.......I'd be curious.......probably didn't weigh nearly as much as the guests are going to gain from eating it hahahhaha....I LOVE cheesecake.....so good to know it's actually possible......in theory I always thought it was but now we know for sure thanks to our little guinea pig schatzie........great job on the cake....I'll bet everyone was shocked when they realized it was cheesecake!!!!!

AYour cake is beautiful. I would also like your recipe if possible. I'm doing a cake in Sept for a bride. That only wants one layer to be cheese cake and covered in Butter cream. Glad to see I can stack on top of it.
