Freezing Filled Cupcakes?

I am one of those who likes to freeze the cakes and cupcakes before icing them. I would like to make a cupcake cake for the teachers appreciation week at school. I use the Riches Bettercream that you buy at Sam's Club, I was wondering...can I fill the cupcakes with that and then freeze them? If anyone has had any experience with that please let me know!!! I have frozen with Patry Pride which is the West Coast version of Rich's. Whenever, I bake something that has never been done before it gets frozen for a few days so that way it can be tested for the next time around.

Hi!

Is this a canned frosting??? I was told in another post that it is not a good idea to freeze a canned icing because the consistency is thinner and it might become runny.

I know that regular buttercream icing freezes just fine...because I have done that without any problems. icon_smile.gif

This is the bettercream, it's the whipped icing that Wal-Mart uses. It comes in a 5 gal bucket and you keep it frozen until you need it. It will last for one year.

I would think that would work just fine especially if you buy it already frozen. icon_smile.gif
