I have been reading this site for many, many months now and I am absolutely addicted, but I've never posted anything before now (I just put a couple of my pictures on a few days ago). My question is this-I have a graduation cake due out next month that I'll be using MMF on, but the school's colors are red, white and blue. I still have enough trouble getting my buttercream to be a true red, any tips for getting the MMF to be a true red? Would the Americolors work better than Wilton colors? Any help would be greatly appreciated!

Americolor does work alot better than Wilton colors. I colored some buttercream red yesterday using the Red Red from Americolor and it worked great. I didn't even have to add a lot of it. Not sure about fondant but I think it works the same.

Thanks, I think I'll make a test batch soon and see if I can get it right.

I used Americolor when I had to tint some fondant red for a Coca-Cola themed cake. Worked great. Not sure if it was Red Red - maybe Super Red? In any case, I recommend Americolor as well.

I just add some to the white fondant and kneed it in. The color will darken as it sits (I made mine and put it in a bag and let it sit overnight), so you may want to test a batch to see what color it'll be for later.

If you dont' have americolor, you can still get it red. I have gotten a red- red MMF before using wilton. I used my pink color and got it as dark pink as I possibly could, then I added the red. If you do it that way then you won't get the bitter taste. The MMF really was red. So were my hands for about two days. icon_smile.gif

lol I've had the same problem
Yeah, you might want to use gloves when you color your fondant! icon_smile.gif

Thanks for the tips, I'll definately make sure I wear gloves! I've just started using the Americolor brand. Someone in one of my cake shops around here recently turned me on to them, and after reading several different threads on here I tried them and liked them a lot better.

I did Red and Blue MMF for my son's cake and the colors were great. Just used RedRed and a Wilton Blue. I added the color to the melted marshmallows before adding the confectioners sugar. HTH!

I will have to try the Americolor. The only place I have seen it or heard of it is here. I have been busy buying other cake toys though... I will have to save up. icon_smile.gif

Try ordering from www.cakecraftshoppe.com. They are located here in Texas but I've ordered from them before and got it within days. I would call them versus ordering it online, though. Seems to work faster. They are wonderful people and have great customer service. They also have a lot of items in the store that they don't have online so if you are looking for something else ask them and they might have it. Another good place to order supplies from is www.cakedeco.com. Their customer service is excellant.

When I'm making my leaves I have always preferred the Wilton Juniper or Moss green. Is there an AmeriColor shade that is comparable to those Wilton shades?

i made red MMF for my dd's strawberry shortcake cake and I used Wilton rose first and then Wilton red...It's not RED RED, but it looked pretty good. But I must warn you..After everyone had eaten the MMF strawberries, they all had red teeth icon_lol.gif

If you dont' need a lot of red-for accents only. I have a small batch recipe for MMF. If you need a lot of it then use the large recipe.

Right after you melt your marshmellows, BEFORE you add any powdered sugar, color your melted marshmellows. You can do it with a spatula instead of your hands and for me it is a lot easyer to color the melted mm than have to kneed it in by hand. Whatever color you want your red to be, just tint your melted mm that color, when you add the powdered sugar it will not change the color. I have done this with black, red, and navy blue with great success.

Hope this helps-it has saved me time and frustration having to kneed in and get the correct color. Also doing it this way I have had good luck with wilton and americolor colors.

Here's my small batch of MMF

Marshmallow fondant

1 cup mini marshmallows
1 tbsp water
1 1/2- 1 3/4 cup powder sugar

Place marshmallows in a standard 1 cup measuring cup and push down and pack them in. Place in a microwave safe bowl and add the water. Put in the microwave for about 20 seconds. Just long enough for them to soften and puff up. Take out and stir with a spoon until it is combined well.

At this point it looks kind of soupy. Then add the sugar and mix and fold until all is incorporated and it is no longer sticky. I take it out of the bowl when it gets to the point where most of the sugar is incorporated and I knead it in my hands. This takes roughly about 5-7 minutes. Take a fondant roller or a regular rolling pin and roll out just as you would Wilton's fondant.

You can get this fondant almost paper thin and it also repairs well.
It's cheap, easy to work with, and tastes great too.

Thank you so much for all your help. Thank you leily for the small batch recipe as well. I think I will try that for all my accent pieces (the cakes themselves will be covered in white MMF). That does sound so much easier than kneading it in. icon_biggrin.gif

leily, how do you store your mmf. I tried it once and it was hard as a rock. I guess I screwed up.

when I make mmf I usually use plastic wrap and cover tightly and then put in an air tight container. Mine still gets hard sometimes but as long as it doesn't crumble you can put it in the microwave for a few seconds and knead it and you should be fine.

Satin Ice makes a red fondant. I believe on container will cover an 8 or 9 inch round.

I usually wrap it twice in seran wrap then store in an air tight container. However mine can get hard also. I found that it is better for me to wrap at least twice... If it is to hard to kneed the next time then I just put it in the microwave for 8 seconds (10 is too much on my microwave)

HTH.
