Does This Icing Need Refridgerated?

Newbi question: Do I need to refridgerate this icing? It's the dairy products that made me wonder.

Ingredients:
unsweetened choc
shortening
1/2 c butter
1/4 c sour cream
1/3 c milk
vanilla
salt
pwd sugar
cocoa

Thx for advice!

do you have the amounts of each item? If the dairy amounts are small compared the the sugars then it is probably all right to leave set out b/c the sugar will help preserve it a little (at least that is what I have heard.) But knowing the amounts might help others to help you =)

Personally, I would keep that in the refrigerator what with it having sour cream and milk and butter in it. Once your cake is iced, I would keep it refrigerated and refrigerate left over icing.

I would have to agree with Cindy. I just wouldn't take a chance on leaving it out. I would especially worry about doing that because of the milk and sour cream.

I have to agree it needs to be refridgerated because of the dairy products... even if you make icing with only a few tbls of milk it can sour on hot days.

Thanks gals. Of course, I thought of this when I woke at 6 a.m. and left the completed cake out all night! It's cool in our house, though, so think it will be okay to be gobbled up this afternoon. Yikes! icon_eek.gif
