I have done a few wedding cakes, but have not done one in mmf yet. But now I have one coming up in less than 3 weeks. My question is, after I ice the cake and cover it in fondant and decorate with royal icing, can i refrigerate it or will that do anything to the mmf? The icing the bride wants is cream cheese, so I don't know that I want to leave it out for a day (or two) before the wedding. And the filling for the groom's cake has cream in it, so same question.
I told DH we are going to have to get a big cooler and take everything out of the fridge so I can put the cakes in!

Here's a bump...I try to avoid fondant when all possible, long story...anyway; I belive I've read that fondant can not be refrigerated.
