Help!! Mmf In Progress And Not Working

I'm in the middle of making a batch of MMF.. I have less than half the sugar mixed in and it is already unwilling to accept any more of the c.sugar. The recipe I'm using is from the recipe file here called MMF -

16 oz white marshallows - for which I used 1 1/2 bag of 10.5 oz. bags of mini marshmallows, heated to melted and smooth over double boiler with 2T water

2 lb (8 cups of confectioner's sugar).


The mixer got it all grainy, but it won't blend together. What am I doing wrong? How can I fix it? Are the proportions correct above or should that 16 oz go with 1 lb sugar? Please help ASAP!!

Your recipe sounds right, can't imagine why it isn't mixing properly. Can you reheat it some to see if that would help? Maybe add more water, just a bit at a time. Janice

Maybe try taking it out of the blender & working it with your hands... Sorry AngelWendy... I don't know what could be wrong.

Well, I heated it up and it worked better and had to knead by hand, too. I got about 6-6.5 cups into it total and that that point it was cracking too much and too dry to add more. I had to reheat it every minute or so for another 20 seconds so I could work it. It was murder on my hands and wrists.

I don't think I'd want to make this very often, BUT.. we finally decided when our wedding will be - THREE WEEKS from now. We're not having any kind of formal reception, but there will be a cake, dammit! I took all these classes to make my own wedding cake, so I want to do that. The wedding is on the beach and I'm going to call and try to reserve the picnic shelter there so we can have cake and champagne (and soda) after. AND... since the cake will be sitting outside, I am thinking that a fondant covering with royal icing flowers and dried borders will be much safer than trying to do just buttercream.

I'm glad to know that you got it worked up, sorry I couldn't help more. I've found that the MMF goes a long way, that's good since it can be a struggle to get it done. LOL

Good luck with all your wedding plans, three weeks doesn't give you a lot of time! I'm glad you are determined to make your own wedding cake, you've worked hard to get to where you can do it!
The fondant cake sounds like an especially good idea for on the beach.

Almost forgot! I meant to ask if you were using 10x powdered sugar, we have been reading that anything below that is more grainy and likely not to mix well.

You know I've never been able to make the big batch turn out right either! Try the small one just to get a feel for how it should be. 1 cup (packed really tight) of mini marshmallows, 1Tbs water, and 1 1/2 to 1 3/4 cups of powdered sugar. Just put the marshmallows and water in the microwave then stir and gradually add in the sugar! This one works for me every time... not sure why I can't get the big batch to work.
