I got this in an email today from another decorating website that I belong to. Thought this might help, as I have seen questions in regards to icing for diabetics and those with calorie/sugar concerns:

To start, here's a quick, easy icing recipe you can use for almost any cake. The greatest thing about this one is that it only takes about seven minutes to make!

#1) Low-Calorie Icing

Ingredients:
Two egg whites
1/4 teaspoon cream of tartar
1/3 cup sugar substitute of your choice
1/3 cup water
1/4 teaspoon salt
1 teaspoon flavoring of your choice
(vanilla is always a hit, but you can also
add 1/4 cup cocoa to the egg whites
before beating to have a luscious
chocolate icing)

Beat egg whites, then add other ingredients and mix until you have the consistency you desire. Add color as necessary.

And, here are some more options for low calorie toppings...



#2) Don't use any! Yes, that's right.
(I know, hard to swallow for us cake decorating enthusiasts!)

The truth is, many cakes are so divine that they can stand on their own without any icing at all. This is especially true for cakes that have creamy fillings. So next time you need a low-calorie icing in a hurry, consider skipping it all together.

A light dusting of powdered sugar and you're done!



#3) Use a fruit garnish rather than icing. This is particularly great forcakes that have a hint of fruit taste to them. And many cakes will be even tastier - and less calorie-laden when adorned with small slices of pineapple or oranges, or even strawberries.

The tanginess and sweetness of the fruit will enhance the taste of any cake.



#4) Collect icing recipes that have been created for diabetics. These are sure to be low in calories and great tasting to boot!

Again, with all the advances that have made, today's sugar substitutes taste so great, icing recipes that are created for diabetics are sure to be a crowd pleasers every time.



#5) Try a low-calorie whipped topping like Cool Whip instead of regular icing. You can add flavorings and fruit to a low-calorie whipped topping to give it further taste-appeal.

Also, adding colors to low-calorie whipped toppings is an easy, fast way to make them look as great as they taste. You can even use different colors to decorate your cake.

Using a low-calorie whipped topping for icing a cake is also great when you're in a hurry. Plus, few people can resist the light, fluffiness of whipped topping, so it's sure to be a big hit with everyone.



#6) Glazes are also good for low-calorie icings. Use a low-calorie sugar substitute instead of sugar in any glaze recipe you have, and PRESTO!
