Question About Marshmallow Fluff As An Icing...

Hi guys:
I have a very silly question. Do you guys use by any chance the Marshmallow Fluff as a icing? If so, for what type of cakes? Or is it only for brownies? icon_redface.gif

Thanks for being patient in answering a silly question? Sometimes when one is new at the cake decor one is afraid to tackle anything new. Just afraid to make mistakes. icon_sad.gif

I think that would be wonderfull in a chololate cake as a filling... I think that stuff is great but a little difficult to spread. Oh wow! You could make a S'Mores cake!! Chocolate cake with marshmellow filling and buttercream icing crusted with graham cracker crumbs sounds sooooo good!! Might have to try that one... bring some new life into the chocolate cake.

Back in the 1970's Betty Crocker made a Whipped Icing mix that both tasted and had the consistency of marshmallow fluff. It was difficult to spread, but very much worth the work.

You might experiment with warming it a bit, as the mix used boiling water to whip the icing. Perhaps a few seconds in the microwave would soften it enough to spread easier. I would crumb-coat my cake with a glaze, first, as the density would pick up all crumbs as it gets spread.

What was nice about it was that it would eventually settle into itself, leaving no streak marks.

Here's a recipe I have for marshmallow fluff icing. I use it for brownies, mostly, with a graham cracker crust bottom layer, brownie, then icing with graham cracker crumbs sprinkled on top.

Marshmallow Fluff Icing

1 lb butter
2 jars marshmallow fluff (regular size)
1 lb powdered sugar
2 t vanilla

Beat butter until creamy. Add marshmallow fluff and incorporate into butter. Slowly add sugar and vanilla. Continue beating until light and fluffy.

Wilton has a recipe with the meringue powder that tastes like marshmallow fluff. I use to LOVE it when I was little. I called it the marshmallow icing. It is much easier to spread.
It is with the recipes that are in the little booklet on top of the canister.

Oh yesss...I added marshmallow creme to my buttercream recipe for my nephew's Rocky Road cake that is in my gallery. It was wonderful. It makes a really sweet, fluffy icing. The kids went crazy!
