Wedding Cake Planning Advice

I will be making a cake for a wedding on July 8. Due to poor planning on my part I will be on vacation from July 1 - to July 5 and will not be able to work on the cake. My plan is to make the cakes the week of June 26th, crumb coat and freeze. I will then transport the cakes to Abilene, head on to Dallas to leave for vacation and return to Abilene on July 5 to complete the cake for the wedding. By the time the cakes reach Abilene they will have defrosted, should I re-freeze the cakes for the time I will be on vacation or leave them unrefrigreated but covered? Would re-freezing the cakes cause them to dry out? Should I consider not freezing the cakes at all and just crumb coat and cover?

If they are unfrozen from July 1st to July 8th they will surely be dried out or moldy


Freeze them

So I am guessing that means it is okay to freeze them, thaw them then re-freeze them. Or should I not freeze them initially but just freeze them when I get to Abilene on the 1st? Or would y'all recommend not making them ahead of time?
