Petit Fours?

Euphoriabakery posted very detailed instructions for making petit fours and I am going to use them in a few weeks. I do have one question though. Do you ice the bottom of the petit fours? If so, how?

I personally just dip them into the icing.......I usually go with white chocolate....(to each his own I guess : ) I lay them on top of a fork, dip the fork down into the icing, submerging half the petit four and then spoon more icing over top....tap the for on the edge of the bowl and then put on a cooling rack...when the topping is almost set...I move them around in a circular motion on the cooling rack, this gets all the loos drippy thingies to come off giving you a nice smooth square.

I normally ice my petit fours like KH said, but the next time I do them, I thinking about trying Euphoria's way and seeing if it's faster. icon_smile.gif
