I am new to royal icing and I have a question. What should be used to flavor it? I thought I read you shouldn't use anything with oil in it, but even almond extract has oil of almond in it-so I wasn't sure if it would work to use it.
MY teacher at the Wilton classes told me is not really suppost to taste good sinse no one really eats it, except maybe the little ones. Caixa
I got the same information from W instructors (3 of em!) and yet there seem to be several folks around here who use lemon juice as either all or part of the liquid. Some also or instead use vanilla (alcohol, not glycerin based) Might be better to use clear vanilla both for color and to avoid potental natural oil contamination. (although alcohol extraction should theoretically only capture alcohol-soluble compounds, still...)
Might try using some flavoring myself, since my kids don't really seem to care how hard it gets, they'll eat ANYTHING that's basically sweet. (and they are what they eat) Still, I'd like them to at least grow up thinking that food is supposed to have flavor, not just sugar... (yeah, I'm really reinforcing THAT )

I've been wondering about this very same thing. I had no idea that you weren't supposed to eat the flowers! Does everyone know this or am I just stupid?!
it gets eaten on cookies....I dont think it tastes bad on cookies....never tried to eat a royal rose those
